Why are the street vendors always crowded?


I found the pavement restaurants are not bad, except for some places guests are constantly in and out, but space is cramped, not enough seats. Many restaurants still do not guarantee the hygiene and food safety.

Not to mention the quality of food, many popular restaurants that are "in the sky." After reading articles from 5 famous restaurants in Sai Gon and two Saigon sidewalk cafes for dozens of years, I still do not understand why these addresses are so crowded.

One of the "specialties" of Saigon is street food. Will visitors come back to try this specialty a second time if the pavement stalls do not improve the quality.
